DW Bistro, a beloved off-Strip dining establishment in Las Vegas, will close its doors after 15 years of service, concluding with a farewell brunch on April 6, 2025. Known for its unique fusion of Jamaican and New Mexican flavors, the restaurant was co-founded by owner Bryce Krausman and chef Dalton Wilson in 2009. DW Bistro quickly became a local favorite, particularly for its weekend brunches that attracted both residents and visitors.
In 2016, the restaurant relocated to The Gramercy on West Russell Road, expanding its space to accommodate a larger kitchen and dining area. To commemorate its 15-year journey, DW Bistro plans to host a series of farewell events featuring guest chefs and popular throwback dishes leading up to its final day. The farewell brunch on April 6 will include live music, food tents, and various surprises for attendees.
Reflecting on the closure, owner Bryce Krausman stated, “Undoubtedly, DW Bistro has left a mark on the Las Vegas local dining scene. We have had great culinary teammates that have spanned over a decade, and we are thrilled to share these final months with our longstanding loyal clientele and our remaining loyal staff.”
Chef Dalton Wilson added, “I’ve been so proud to share my culinary heritage all these years in Las Vegas, the place I’ve called home since 1998.”
As DW Bistro prepares to bid farewell, patrons are encouraged to visit and celebrate the restaurant’s contributions to the Las Vegas dining scene before its final service.
Thank you DW Bistro, for XV unforgettable years, delicious food, incredible drinks, impeccable atmosphere, family, friends, inclusion … the most fun and original brunch! Leave an indelible mark on the community, success, and thanks for these years (Bryce, Chef Dalton, and all his staff).
